This one came from my friend, Mary Lou Alfini, and oh what a time I had getting this easy and simple cake made. The first time my lemon extract was old, so that ruined the cake. The next time I baked it at 350° instead of 325° . . . ruined again. But the third time was the charm. Delicious pound cake, well worth the wait.
1-1/2 cups butter (no substitutes)
3 cups sugar
5 eggs
3 cups flour
2 tsp lemon extract
3/4 cup 7-Up (not diet)
Cream sugar and butter, beating until light and fluffy. Add eggs, one at a time. Add flour. Mix in the 7-Up and lemon extract. Bake@ 325° for 1 to 1¼ hours in a greased bundt pan.
Needs no frosting.
