Caramel Sweet Potatoes

5  med  yams (dark skinned with red flesh)
1  tsp  salt
3  Tbs  flour
1  cup  brown sugar
2  Tbs  butter
1  cup  half & half cream
1/2  cup  chopped pecans
8  large  marshmallows, optional

Gently boil the potatoes until just tender. If you cook them too much, they will get mushy.  Cool enough to handle.

Peel and slice lengthwise into a buttered baking dish. Mix salt, flour, and brown sugar.  Sprinkle over the potatoes. Dot with butter. Add marshmallows and nuts. Pour cream over all.

Bake uncovered @350° for 40-45 minutes.
