2-1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 tsp vanilla extract
2 eggs
8 oz Heath toffee bits (regular or chocolate covered)
Heat oven to 350°. Lightly grease baking sheet, or cover with parchment.
Mix together flour, baking soda, and salt in a bowl.
In a large mixing bowl, beat together butter, white sugar, brown sugar, and vanilla until well blended. Add eggs and blend thoroughly. Gradually add flour mixture to the batter, mixing until just incorporated. Stir in toffee bits.
Drop by rounded teaspoonfuls onto baking sheet, and bake for 10½ minutes until cookies are golden. Allow to cool for a few minutes before removing cookies to a cooling rack.
