This is especially good in the summer, when the tomatoes are oh-so-good.
2 cucumbers
1/2 med sweet onion
2 tomatoes, cut into large chunks
1/2 cup white vinegar, or rice vinegar
2 Tbs water
4 packets Sweet n' Low sweetener
2 Tbs sugar
Salt and pepper to taste
Peel cukes and cut them into thick (1/4") slices. Quarter the onion and cut into slices. Add to cukes, along with the tomatoes. Season with salt and pepper.
Combine vinegar, water, sweetener, and sugar. Pour over cukes. Cover a marinate in the refrigerator for 30 minutes before serving.
Note:
You can use Equal sweetener, but you may need a bit more of it. Splenda just doesn't work well in this recipe. Also, I prefer the plain old white vinegar. You can bump up the tomatoes and cukes, but the dressing will remain the same amounts given.
