1/2 cup butter or margarine
1 egg
2 cups flour
1/4 tsp salt
1-1/2 cups small diced rhubarb
1 tsp cinnamon
1-1/2 cups brown sugar
1 tsp baking soda
1 cup buttermilk
1/4 cup sugar
Cream butter and brown sugar. Beat in eggs. Sift flour, soda, and salt. Add to creamed mixture alternately with buttermilk. Fold in rhubarb.
Mix cinnamon and sugar. Sprinkle over batter. Bake @350 degrees for 30-35 minutes, in a prepared 9x13" baking pan. Serve warm. Top with ice cream, if desired.
You can substitute apples for the rhubarb and have a delicious apple cake.
