Spinach Salad

1 pkg fresh spinach, washed, stemmed, spun dry
2 hard-boiled eggs, chopped
4 strips bacon, fried crisp and crumbled
1/2 cup shredded Swiss cheese
1 avocado, sliced

DRESSING:
1 cup vegetable oil
5 Tbs red wine vinegar
1/4 cup sour cream
1/2 tsp dry mustard
2 Tbs sugar
Coarsely ground black pepper
2 tsp chopped parsley
1 clove garlic, crushed

Mix salad dressing at least 6 hours before serving.

Toss spinach with desire amount of dressing. Top with bacon crumbles, eggs, cheese, and avocado.
