Crunchy Coconut Cookies

Be generous with the coconut.


1  cup  shortening
1  cup  granulated sugar
1  cup  packed light brown sugar
2  tsp   vanilla extract
2  eggs, unbeaten
2-1/2  cups  all-purpose flour
1-1/2  tsp  baking soda
1  tsp  salt
2  cups  Honey Bunches of Oats, or cornflakes
3/4  cup  flaked coconut

Cream shortening, sugars and vanilla until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift or whisk flour, baking soda and salt; stir into creamed mixture. Stir in corn flakes and coconut.


Drop by tablespoonfuls onto cookie sheets lightly sprayed with non-stick cooking spray. Bake @350 degrees 10-12 minutes or until light golden brown.
