Strawberry Salad with Balsamic Raspberry Vinaigrette

My friend, Star, had this delicious salad at Longhorn's Restaurant and came home and cloned it.


1  bag   Spring Mix Salad
1  small  red onion, sliced thinly, separated into rings
16  large  strawberries, cut into thin slices, patted dry
30  green grapes, sliced in half, patted dry
1  can  (11 oz)  mandarin oranges, well drained,  patted dry
4  oz  crumbled feta cheese
1/2  cup  brown sugar glazed pecans
Pumpernickel croutons, optional

Spread salad mix out on two large plates. Sprinkle with red onion rings. Top with strawberry slices, grape halves and mandarin oranges. Sprinkle feta crumbles on top and then sprinkle with glazed pecans. Top with a few swirls of Balsamic Raspberry Vinaigrette.

Balsamic Raspberry Vinaigrette
1  garlic clove, minced
1  tsp  honey Dijon mustard
2  Tbs  raspberry vinegar
1  Tbs  balsamic vinegar
1  Tbs  brown sugar
1  Tbs  honey
¼  cup  vegetable oil

Combine all ingredients except the oil. Whisk in oil
