Mixed Green Salad with Orange Raspberry Vinaigrette

6  cups  fancy, tender salad greens*
1/2  cup  chopped red onion
1  sm  can  mandarin oranges, drained
1  ripe fresh peach, diced
Fresh blueberries and red raspberries
Crumbled Goat cheese
Almond slivers, toasted**

Place whole lettuce leaves on each individual salad plate. Sprinkle with chopped red onion. Drizzle with prepared dressing. Add the fruits and goat cheese. Drizzle with a little more dressing. Top with toasted almonds. Serve the extra dressing on the table.


DRESSING:
1  cup  orange juice concentrate
6  Tbs  raspberry vinegar
2  Tbs  vegetable oil
1/3  tsp  salt
Grated orange rind from one navel orange

Whisk dressing ingredients together. Chill several hours.

*I like red leaf lettuce, butter lettuce, and arugula.

**Can use candied nuts of any kind, if you prefer a sweeter nut.
