Best Cake

A great pineapple cake from Dave's cousin, Merrilee Stark.

2  eggs
1  large  can  crushed pineapple, not drained
1  cup  sugar
2  tsp  baking soda
1  tsp  vanilla
1  cup  chopped pecans
2  cups  flour

Cream together, eggs, sugar, and vanilla. Add undrained pineapple, soda, and flour. Stir in nuts.

Pour into prepared oblong cake pan. Bake @350 degrees for about 40 minutes. Cool completely before frosting. Store frosted cake in the refrigerator.

Frosting:
8  oz  cream cheese, softened
1/2  cup  butter, softened
1-1/2  cups  powdered sugar
1  tsp  vanilla

Beat cream cheese and butter with vanilla, until light. Add powdered sugar and whip until creamy.
