Old Fashioned Peach Cobbler

This is just a good old fashioned kind of cobbler,  with dumplings on top. From my friend, Jan Faulkner.

6  cups  fresh peaches (about 9 peaches, but I use frozen peaches)
1  cup  sugar
2  Tbs  flour
1/4  tsp  salt
1   tsp  grated fresh lemon rind
1  Tbs  butter
1  tsp  cinnamon

Put peaches in boiling water for  one minute to loosen skins. Peel and slice.

Combine peaches with the remaining ingredients (except butter and cinnamon). Put in a square baking pan. Dot with the butter. Sprinkle cinnamon over the top. Top with biscuit dough.

Biscuit Topper:
1-1/2  cups  flour
2  Tbs  sugar
2  tsp  baking powder
1/2  tsp  salt
1/2  cup  shortening
1/3 - 1/2  cup  milk

Mix dry ingredients. Cut in shortening. Add milk, stirring just until mixed. Do not over-work the dough. It should be soft.

Roll out on floured surface, large enough to fit the pan. Put it on top of the peaches.  Slash top. Sprinkle with sugar. Bake @425 degrees for 20-25 minutes. Serve warm, but it's good anyway you want to eat it.
