3/4 cup firmly packed brown sugar
1/2 cup butter, softened
1 egg
1-1/2 tsp vanilla
1-1/3 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 (3 oz) bars white chocolate, cut into ½” pieces
3/4 cup salted macadamia nuts, coarsely chopped
Preheat oven to 350°.
In a large mixing bowl, combine brown sugar, butter, egg, and vanilla. Beat at medium speed, scraping bowl often, until well mixed, about 1-2 minutes. Reduce speed to low. Add flour, baking powder, baking soda, and salt. Continue beating for 1-2 minutes, scraping bowl often. Stir in white chocolate and nuts by hand.
Drop rounded spoonfuls, 2” apart onto greased cookie sheet. Bake for 9-12 minutes or until lightly golden. Cool 1 minute before removing from cookie sheet.
